Coeliac Worldwide is here to make a difference. We believe that there is more to be said for the Coeliac diet. Sure it’s a good start, but it’s missing one vital component. It is only about what food to eat and not about getting value from the food that is eaten. Because..... We are not what we eat....... We are what we absorb and Coeliacs and many other similar conditions are less likely to absorb because the Vili is damanged, and the Vili is one of the ways nutrients are extracted from food. So not only are Coelics affected by Gluten, they are less likely to absorb the foods they eat.
Why is Coeliac worldwide different? Because we have been watching positive results for over a decade. How? Because anyone with the gluten intolerance is most likely to be less likely to break down their food far enough to extract the nutrients, vitamins and minerals from food. What is the evidence? The symptoms and potential conditions that one gets from malnutrition is similar to the symtoms of Coeliacdisease. So how does this information do anything for me?
